Akito, is a Maori verb that means to do something slowly.

We think that’s a beautiful concept that applies in our cooking and our food practices.

We chose the word Akitō primarily because it connected with our passion for slow food. But its more than that. It’s a lifestyle direction.
When something is prepared with time, its prepared with love and attention. Thats our ‘not so secret’ ingredient that can be found in all of our dishes.

In our experimental kitchen you will find us practicing ‘slow food’ preparation methods such as pickling, preserving fermentation with fruit vegetables, and with grains.

We’re not strictly a vegan or a vegetarian eatery, we are simply a place that loves to highlight ‘plant food’, and showcase the creativity and flavour that can be obtained from the humble veg. But if you’re someone who ca'n’t do your eggs without bacon, then we have options for you too. Just try our Halloumi cakes with a side of Aoraki hot smoked salmon.

At Akitō, we aim to take on a re-generative approach and create a space that gives back to the earth as much as we take from it.

By minimising food waste and plastic use in our workplace, we aim to make ourselves as sustainable as possible to create a better footprint for our island and the greater environment.
